Straight Malted Rye
48% ALC/VOL · 700ml · New American oak, toasted & charred · 4.5 years · 100% malted rye
One grain, one district. The rye was grown at Tubbo, a property leased by the team behind the Whitton Malt House, then malted just next door at Voyager Craft Malt before being distilled and laid down in Coleambally. Four and a half years in fresh American oak, toasted and charred, wraps the rye's natural pepper and herb in a frame of vanilla and caramel. It's a true paddock-to-bottle rye that tastes of exactly where it's from.
Nose: Black pepper and baking spice, cinnamon, dried sour cherry, fresh-sawn oak.
Palate: Crisp and dry, clove and rye-bread spice moving into caramel, orange peel and toasted grain.
Finish: Long and warming, peppery heat fading to vanilla and clove.
Malted Corn Whisky
43% ALC/VOL · 700ml · New American oak (toasted & charred) + ex-Maker's Mark bourbon barrels · 4-4.5 years · 50%+ malted corn, 25% malted rye & 25% malted Schooner barley
Our take on bourbon, grown at home. The corn was raised by Scott Hogan in Coleambally, the rye came off Tubbo near the Whitton Malt House, and both were malted at Voyager Craft Malt before distillation and maturation back in Coleambally. A corn-led mash brings the sweetness, malted rye adds backbone, and a marriage of first-fill American oak and ex-Maker's Mark barrels rounds it all out. Familiar and easy, with a Riverina accent.
Nose: Brown sugar, vanilla and buttered corn, with soft baking spice and toasted oak.
Palate: Rounded and sweet, caramel and toffee moving into maple, cinnamon and a gentle rye pepper.
Finish: Medium and soft, warm caramel and oak with lingering sweetness.
Straight Malted Barley
44% ALC/VOL · 700ml · Ex-Maker's Mark bourbon barrels · 5 years · 100% malted Schooner barley
Local Schooner barley, grown across the region and malted at Voyager Craft Malt behind the Whitton Malt House, then distilled and matured in Coleambally. Five years in ex-Maker's Mark barrels, our longest-aged release, bridges two worlds: the biscuity, honeyed character of Australian malt and the vanilla-and-caramel sweetness those Kentucky barrels leave behind. Smooth, generous and unmistakably ours.
Nose: Malt biscuit and honey, vanilla, red apple and a hint of coconut.
Palate: Malty and smooth, golden syrup and baked bread moving into caramel, dried fruit and soft oak.
Finish: Long and gentle, honeyed malt with warm vanilla oak.
